Recently I got the new IP8 and in setting it up, I must have clicked on using my finger touch for Apple Pay even though as far as I can tell, there is no credit card asssociated with my Apple Pay at this time.

So, today I saw a review for Word for iOS (ipad and iphone) that said it was "free". When Word came out for the ipad a few years back, I think it was free. However, I must have deleted it from my ipad since the app wasn't on it anymore. So I reinstalled it and it the process, it asked for my finger scan (since as above, I accidently set the phone up for that). When I touched my finger to the screen, it said something about ApplePay.

Going back to reading the App on the App store, it clearly says it is free for 30 days only. Whether I'm grandfathered for the free version as above, I don't know. I do know I don't want to pay for the 365 deal since I almost never have a need to use it on my iPad.

Wondering how to cancel Word if they start charging me in 30 days? I went into iTunes, but don't see any place about cancelling a paid service. Anyone know how to cancel something like this?
 
It sounds like you just authorized installation of the app. Subscribing to Office 365 through iTunes billing requires an in-app purchase (which has nothing to do with Apple Pay). To make sure, you can check if you actually have a subscription as described here:
