I have about some videos stored on my Ipod Touch.

I noticed that the Touch video software allows you to delete a video.

What purpose does this serve if next time you sync with your computer, the video is reloaded on your Touch?

Am I missing something here?

If you're manually syncing then the video isn't reloaded unless you want it to be. Deleting it from your touch just makes more room available when next syncing and reduces the sync time when not reloading it. Just a small time savings feature

Heh, well it comes in handy when you go to a conservative boarding school that forbodes you from having any movies in your room/computer/iPod and you happen to forget to take a movie off after break!
