I'm looking for the movie Apocalypto and it says the movie is not available in the us. Only in the Australia store. It asks me if I want to change the store. Could I be able to buy then if I change stores? If so, will I have to keep changing the store just to watch it or will it be all in one store or list of movies I bought? Am I making sense.

To buy from the Australian store, you will need an Australian method of payment.

I don't own an Apple TV but I suspect that you'd need to switch stores in order to watch it too.

Correct, although you can change to a different regions iTunes Store easily enough you will need an AppleID that's been setup for that region to make purchases.
And then switch between AppleIDs to view whatever regions content you have.
