I've noticed when watching movies rented and purchased from iTunes on my base 11" model MBA, the movie stutters occasionally. Is this due to only 2gb of RAM the 1.4ghz processor or some other factor. They never stutter on my iPad or my 15" MBP, just the 11" MBA. I've used the individual updates to get to 10.6.8 and my videos from my video camera play perfectly.

According to Apple you need a 2.0Ghz or faster Duo Core to play back HD Video so it may just be that the MacBook Air 11" is just not powerful enough.
