The best way for me to copy my music from my iMac to my iBook is via iTunes...any applications to copy shared music files over iTunes sharing?

File sharing is definitely easier when you control both boxes. Otherwise, just use gettunes: http://sourceforge.net/projects/gettunes/. It claims to do what you want though I have no experience with it myself.

GetTunes seems a really good idea, however I think I'm going to have use FireWire. I have a feeling that GetTunes will copy the song without keeping the original bit rate etc. Good idea though.

Definitely firewire (target mode is definitely the easiest between Macs) or ethernet/WiFi if one of the machines is a PC.

Nah, the file from GetTunes will be the original file just not streamed to iTunes, what you will lose is playcount, last played, ratings, etc... pretty much any way you do it, unless it's a one time thing.
