I'm struggling to arrange my iTunes library in a proper OCD fashion.

I have a double disc album and each track is numberd and each track has the correct tagging i.e. track 1 of 13 disc 1 of 2.

However, when I browse to that artist in my iPhone and tap on that album, it numbers the tracks numerically so the first track is track 1 of disc 1, and then second track is track 1 of disc 2 and so on. This never used to be a problem in older versions of iTunes, discs would show in the correct order once the album was accessed in an iPhone/iPod.

Can anyone help please?

In iTunes if you sort by disc in the playlist you should get disc 1 then 2 and this should transfer to the device (or it does for me).

Failing that, you can rename the songs so that they show as track 1 of 26 (as if it is a single disc album) which will definitely solve the issue.
To speed things up, you can select the songs and edit all of them at once to a 26 album disc then individually go through the songs and change the track numbers of the 2nd half of tracks. I find it easier to use the next song buttons on the edit window.

Thanks for that.

Do you know how to change the generic artist photo that iTunes itself adds?

If you are connected to the internet iTunes will download a new photo for most popular music. Failing that, you can set the photo to anything you want, either per song or per group of songs using Get Info when you right click and choose the artwork tab.
