I had updated my itunes with the last update and ever sense then the damn thing has been starting up by its self, I've looked in the preferences and settings so I thought, and can not find any thing to turn this off. Does anyone have any idea why this is happening and what can I do to turn it off from starting up?

Go to System Preferences->Accounts->Login Items and select iTunes Helper to not boot when starting up. See if that works.
 
I made the changes as that was the only item checked in that area, hopefully that works thanks, for the quick response.

Remember, having the item checked only means it launches hidden. If you don't want it to launch at all, select it and click the "-" to remove it from the list.
