As far as audio stuff goes, I've noticed no degradation or anything, sounds a bit cleaner. I do have issue with the fact that it's taking a bit more RAM than previous versions. Also taking up to 25% of my CPU.
 
I have installed iTunes 7 on:

  • Mac Mini G4
  • Gateway P4
  • Brand new AMD 64bit X2

The only system that's had any problems other than the typical slow program loads that the Gateway always has is on the AMD based PC: it wouldn't start. After restarting 3 times, it finally would, and its been fine since. I do notice, however, that iTunes got a different icon than the blue music notes that everyone else got (its a generic windows icon of some sort?)
 
The sound stutters on my XP laptop, but someone said that's a magicsound call that's not working right (or something like that, I'm no techie) on the apple forums...

On the OS X side of things, it works great, but if I close it and reopen it, the window defaults to a minimum height that, with the dock on the bottom, and my screen res. set to 600 by 800, makes it too big and I have to drag the window over so the corner's not covered by the dock and resize it.

Oh well, overall I'm happy with it. Sure Apple better fix this crap soon, but I wouldn't not download it.
 
Love the new look and features, running on a iMac G4 20" with 10.4.6, no problems with iTunes.. installed moments after it was announced :D

All are running fine with the one exception that there is a noticeable 'lag' on clicking on Play/Pause buttons. Everything else is fine.

The only real problem I've found is that iTunes 7 thinks that imported bookmarkable MP3s are podcast episodes, but they don't turn up in the Podcast section (no associated feed) and not in the regular library either. They can only be found with a smart playlist.
