So, lets say I'm working on an iWork document (such as Pages), and I save. Instead of clicking the little 'x' button to close the document, I command+Q to quit Pages altogether.

My problem comes in when I re-open Pages or another Pages document. Not only does the new document open, but the previous one does as well. I can't stand this! Why is this happening? Unless I hit the 'x' button to close the window, it will always open previous documents where I didn't do that.

I turned off the 'resume' function already in System Preferences. What do I do?
 
Go to:
System Preferences>General
Uncheck the box - Restore windows when quitting and re-opening apps.

I have noticed Pages opening faster now.
