Can you jailbrake your ipod touch and then if it gives you problems, restore the original apple settings through itunes?

If you restore it and choose to start fresh I don't think it will because I don't think they have a way of knowing. Although some people have found traces of installer.app on their iPod after restoring, but I don't know if they restored with fresh settings so..
