Jailbreaking 3gs- TinyUmbrella with iTunes

Part of the instruction is "Shift + click restore in iTunes. I can't find restore in iTunes. Please see screen shot.

Which tab should I click? I tried everywhere but I can't find restore.

Yeah, connect your phone and select it from the new device list on the right.
