Isn't iTunes complete garbage!!!?!??

I got a good deal on the first three Harry Potter audiobooks (read by Stephen Fry) on CD and have found that it's a complete ball ache to get them into the iTunes library, recognised as audiobooks and sorted in the correct order. Perhaps I'm being stupid (a likely scenario), should it not be as easy as putting the files into iTunes and everything just working?

It's not just you, iTunes is terrible on pretty much every platform now. It seems like Apple is slowly sunsetting it for whatever their new digital platform will be, probably in the same vein as Apple Music.

As for your problem, sorry can't help there. Just wanted to let you know you're not alone in that thought.
 
If the book isn't in the right format, then it can't be added. There are players that are more user friendly, but then they don't have the other features that iTunes has. While I am not particularly fond of it, I am also well aware that there are usually problems with every kind of software, so you end up using the least painful piece of software.
 
I've never had any audiobooks, but for movies, you can edit the 'sort as' field to get them to appear in the right order. So for example you would enter Harry Potter 1, 2 and 3 instead of their full titles.
 
I feel the same way about organizing pics in iPhoto that are not on an IOS device.
