When I try to send photos from my computer to iPhone via email(outlook 2011) it sends the text with jpegs removed message. I have an iMac. What am I doing wrong? And when I compress a photo and it still is too big to send???

You could try sending the photos as an attachment from Outlook instead of dragging them into a message window, if that's what you're doing. What e-mail service are you using? How big are the photos?
 
Also, I'm not sure if this is a situation where you have to email them or not, but there are some other pretty good solutions for getting the photos onto your phone w/o using email as an intermediary.

You could sync them through iTunes.
You could use a cloud service like DropBox.
You could upload them to an image hosting site such as imgur or photobucket and then save them onto the phone via Mobile Safari.

Just some thoughts if it doesn't have to be done via email.
