I've owned a Mini in the past, which was a low end C2D, and it was great as an HTPC in it's day. It got slow, and I sold it for $300, which I thought was fair. I just ordered my new Mac Mini though, a 2011 Mini with the base specs:

    2.3GHz i5
    2GB RAM
    Intel HD
    500GB

I am going to be ordering 8GB RAM, and hopefully that will be enough. This is going to be running a few TV's, and remuxing MKV's into MP4's for them using iFlicks.

I am moving from a windows HTPC, and I wanted to know what the best enclosure would be for holding 2-3 drives for the mini.

    Thanks!

Please replace the ATV on your main TV with this Mini! Running content through an ATV gives lot of troubles. If you are a movie fan, then 24p, DTS and MKV support usually are very important. It also allows you to play BluRay with a 20 bucks external USB powered drive.
Oh, and order a single 1600mhz stick. It will allow future expansion, and gives you 10GB for now.
You can also drop an extra drive in the Mini itself. Every 12mm 2,5inch HD will fit.
And for the external: I went with a SATA docking station and a bunch of loose bricks with my movie collection.
