You should get winterboard for themes of course.

SB settings without a doubt.

Since you're a newbie here and to the jailbreak scene, I'll warn you; don't talk about or ask about an app called Installous. It is illegal because it steals apps and mention of it can get you banned. On a lighter note, enjoy your new jailbreak! I like the tethering apps, as well as sick themes (you can find them right on the Cydia homepage), and different tweaks like AndroidLockXT and FakeClockUp. Those are some pretty basic ones.
