Is 256 recommended for use with Parallels? I'm debating between 128 and 256 for the Air.
All I can tell you is that my OS X installation plus my VMware Fusion VM, including Windows 7 and its apps, use a little more than 200GB. I could probably cut some corners and use a little less that that but can't imagine ever being able to shoehorn everything into 128GB of storage.

How many GB do you designate to Windows 7?

In VMWare Fusion do you have to set a specific size for Windows or does it expand based on use?

My VM'a disc size is 40GB. I set it up that way when I created the VM and have not changed it. I have one processor core and 1GB of RAM, which is VMware's recommended value, dedicated to the VM. This combination has worked very well, so I have felt no need to change it.
