Apple supports their devices better than any other company I've dealt with except for Garmin. I mainly use my iPad Mini2 as a Digital Clock with Weather these days and it does a great job there. I'm still using my iPad 2 as well, mainly as a workout clock.

What was the version of the update?

It's odd you just got notified for that, that update is from January.

It's been running as a clock for a couple of weeks. Maybe it was pushed a little harder or Apple decided to put up a popup for those of us recalcitrant.

The ongoing support for iOS 12 is an interesting development, I hadn't realised they'd started doing this until someone brought it up in another thread recently. As no devices got left on iOS 13, it is effectively the previous release, so I wonder if extended support for the current -1 OS version will be the norm going forward? The 6S is rumoured to be dropped by iOS 15, so perhaps 14 will go on getting security updates a while longer?

We have two iPhone 6s models in our household so more security updates would be great. It's one reason I buy Apple hardware - because of long device support. I still remember a phone I bought which promised at least one update. And they reneged on that. I was shocked.
