As with any new software release from Apple, we that are Jailbroken cannot update to iOS 6 via OTA correct? Will I have to restore to a clean version of 5.1.1 then update to iOS6? Or can I go right from a JB of 5.1.1 to iOS 6 through itunes?

you can go to 6.xx via itunes.
Maybe have to put it in DFU, but thats all. You will loose the jailbreak though.
