So I have a 27" iMac i9 Vega 48 1TB ssd (Catalina) that is 10 days old. It has crashed several times while doing nothing much at all. Occasionally I will also see some screen garbage that requires a restart. I added 32 GB OWC RAM to the 8GB, placed new RAM in the free slots. Is this a Catalina issue? Vega 48? RAM?

Take the DRAM out and see if the issues go away...if they do, you have your answer. Or take out the Apple DRAM, put the OWC DRAM in their place, rinse, lather, repeat...

More issues than not with iMacs and kernel panics are from 3rd party RAM.
Since the 27" models were introduced I own 8 different years. And if I get a kernel panic, the first thing I do is a hardware test, more times than not the test will discover an issue with the RAM.
If it doesn't discover a fault and I still get the panics, I will temporarily put the original RAM back in and use the machine normally to continue testing.

Would almost bet money right now without knowing anything else it is RAM.

Concurring with @mmomega ...I have a 27” 2010 Core i7 iMac that has always been persnickety about DRAM and while it will take 32GB and has it, it has always behaved better with 16 or 24GB inside, despite having DRAM that is properly specced for the iMac. The same with my 27” Late 2013 iMac in that I bought DRAM that was specced and matched according to the RAM manufacturer and yet would eventually KP all over the place...it stopped once I went to another Mfr and chose their compatible DRAM, but every so often I got a KP and I would wonder. Coincidentally, KPs on the Late 2013 ramped up with High Sierra running NVIDIA Web Drivers and the CUDA driver and then went completely disappeared when I uninstalled those drivers and moved to Mojave. However, I did experience those KPs prior under El Crapitan and Sierra. I have Crucial DRAM (2x16GB) in my 2019 Core i9/Vega 48 iMac and I haven’t had any issues with it over the last 5 months.

Alternatively, leasing computers with Apple BTO DRAM has NEVER, EVER caused me any issues. Of course, you pay through the nose with it, but I digress.

I bet it’s the DRAM...
 
So I have found that the iMac runs stable with all 40 GB of RAM if I pull the Akitio Thunder 2 Quad Mini. I have it attached via Apples TB3-TB2 adapter. Is this a coincidence? Is this a Vega 48 issue? Details on the Akitio here.
