I went back to ONLY the Apple pre-installed RAM last night and have had no problems since then. I've even tried to cause a kernel panic by doing some of the things that had previously caused them, and still rock solid. So my diagnosis is bad memory.

So I called newegg.com this morning, and they told me to send it back and they would refund without charging me the restocking fee. Very easy, they were great to deal with. I'll definitely shop there again next time because of the good service I received this morning.

So I shipped those 2 sticks back and ordered 2 1GB sticks of Crucial RAM from newegg.com. It was $20 more per stick, but after I'm not messing around with no-name memory anymore after this experience!

Well the drama continues...

I got my 2 new 1GB sticks of Crucial RAM Thursday in the mail. I installed them Thursday afternoon. More kernel panics. I took them out and reseated them. Still more kernel panics. Go back to originally installed Apple RAM... no problems.

So I start the process of swapping the RAM around until I figure out that one of the new Crucial sticks is causing the problems. RIght now I've got one of the new stick in and the original 512 stick in for total of 1.5GB. I got my RMA number from Newegg and mailed the bad stick back to them yesterday. SO hopefully I'll get the replacement in a week or so.

So 3 out of 4 sticks of RAM that I've gotten have been causing kernel panics. I'm hoping this last one will be fine when it comes in.
 
Final update... months later...

The RAM I got from newegg was Crucial Value RAM and thats what was causing the problems. I finally broke down and returned those and bought a 1GB stick from datamem.com and have had no problems since then. It was more expensive, but I wish I had just went ahead and paid the extra money in the beginning and saved myself all this trouble.

So here's what I learned form this whole ordeal: Don't buy cheap RAM. You're asking for problems!
