Will series 7 be the only watch with keyboard? For some reason I thought it was part of this OS8 and for series 6 as well

I don't see it on OS8 on my Series 6 🙁. I think it's just a Series 7 thing.

I plan on getting the 7 but still a bummer. Wish we had an ETA on the new watch

S7 only. It was introduced in the Apple Watch Series 7 keynote as a feature of the new watch because of the larger screen. It was not mentioned for WatchOS 8 at WWDC.
