I am a retired person with a new Mac pro laptop that I have had now for about ten months. It is not used very much; mostly for Facetime and skype with the grand kids. But we do use it for email when we are away from home. Recently I wanted to check my email password on keychain, but it will not show me what is on the keychain without a password to access the app.

On my old G4 running tiger I have a password where I can do this. Somewhere back there I created one, and I remember doing it, but I don't remember ever creating one for this new laptop. Is this something that I had to do when I first booted it up? Something I can do now?

Unless you've specifically set a different password, it's most likely your regular admin password that you use to log into your Mac.
 
If you do not have a password set up, leave the password field blank when prompted, and press return/enter.
