Google Earth
Ragnarok Online
Sierra Games (Kings Quest, Space Quest, etc)

More apps like the iElectribe by Korg. This think is just begging for something like a kaosolator also a virtual monome.

Also Boxee for the ipad :D

I want a true, handwritten note taking app that can work without a lag (as has appeared in all I have tried so far) and does do the smoothing.

I have probably tried 6-8 and all have a significant lag which is not present on the iPhone, as if it comes from the large input surface of the iPad and the processing overhead imposed.

SimCity, ideally around the SimCity 3K era

I second, third, and fourth that! The large iPad screen would be ideal for SimCity.

I also would like to see,

-GarageBand

-Vintage Game Emulators(like NES, Super Nintendo, MAME,etc...)

-Hulu

-Comcast(so you could watch all your on demand programs if your a Comcast subscriber)

-iDisk(You'd think Apple would have already made an iPad specific version)

Hulu
splashID
Facebook
Beejive
Print app that doesn't require a pc/Mac/cloud
NBC player
CBS Player
FOX Player

Monkey Island 1&2
Indy Fate Of Atlantis
microsoft Office
iDisk
Texas Holde Em HD (original Apple one)

Something that will let me print directly from my iPad, and something else to let me mark up Word docs, so I can leave my MBP home.

Colloquy
Beejive
Defender Chronicles
MS OneNote (or equivalent)
Some equivalent of Visio

Cydia apps:
SBSettings
Activator
pr0switcher
Backgrounder
GV Mobile+
Safari Downloader
Ability to install our own fonts (would fix a lot of Pages conversion issues)

An app for it to become an interface for iPhoto, Garageband, iMovie with costumized GUIs for each app.

(eg mixing desk for Garageband)

Then we'll be getting to a place where I want to be :D

NetFlix would have been mine. =]

Google Maps for offline. Like being able to save a map of a particular town or area.

-Hulu
-Comedy Central Player/website (Jon Stewart and Colbert Report aren't on Hulu anymore)
-Hitchhiker's Guide to the Galaxy
-Google Maps
-GQ app that isn't just a freaking PDF file/reader
