Per Apple and Intel's spec the iMacs for 2012 max out at 32GB.

I know there are no (1x16GB) 16GB SODIMMs being sold today to populate 4 memory banks but I find the thought enticing.

This thread came about as Apple & Intel often do not bother updating documentation unless these are to address a bug or govt regulation.
 
Check over at OWC (macsales.com). If there is a way to increase the RAM in your Mac they will have figured it out and tested it.
 
It is 32GB for the 27", and 16GB for the 21.5",according to Mactracker who keep up to date on these things.

OWC agree with 4x8GB the highest offering so that model does not handle the 16GB modules.
