So I got an update notification from iTunes just now...not sure how long it's been out. Is it safe folks doesnt interfere with the JB?

I updated and I'm fine.

Has iTunes EVER broken compatibility with a Jailbroken device though? I've been doing this since 2008 and I don't really remember any instances.....

It's not updating iTunes that removes a jailbreak, it's clicking the "Update" button on the summary page for your jailbroken device.

iTunes 8.2 did cause some brief problems, no problems for the last couple of years.

I updated and no problems

There used to be a time where you had to have a certain version of iTunes for the jailbreak to work, god help you if you updated, reverting was an annoying process.
