First, either you have to have two cards that can drive one monitor, one card that can drive two monitors, or a combination of both.

With that said, you plug both of them in to their respective connectors, and boot up. The process is pretty much the same for 9 or X, and straightforward.

You can set up mirroring or two virtual desktops. That is done through the dispalys pref pane in X, and/or the Monitors Control Panel in 9.

That's about it, just plug in both and setup through the respective control panels. With the virtual desktops, you can set up the monitors to be side by side up and down, etc. and your mouse moves from one to the other seamlessly.

What are you getting for a new system?? New Mac tower??? Since they all come with dual head video cards these days, you might need to get some adapters (depending on the screens). If you plan to use a new Apple screen (LCD) and an older CRT, then you will only need to get a DVI-VGA adapter (Apple sells them now). Plug them both in and you are pretty much good to go. Open up the Monitors control panel (OS 9.x) or Display preference (OS X) section and set up one as the the first screen and the other as the second. That way, you can go from one to the other. Use one for most windows and the other for pallets and such, or however you want.
