Apple still gets to support Intel processes. Even if Apple apps are all AS-native, those apps, and the system itself, will still continue to support intel processes. Certainly, not all third-party apps are there. That's where Rosetta is used. And, last I heard, at least a couple of Apple's pro apps are not fully AS-code. All that takes time. Universal-coded apps will still be useful for another major macOS update or two. Very much the same thing happened when Apple changed over from the old PowerPC to Intel.
