I recently got Fios' Gigabit, and if i connect the Aukey via:

LG 5K monitor - speeds are only 300-400Mbps
Aukey directly to Macbook Pro 2017 - speeds are about 900-950Mbps.

Does anyone know if it's possible to get near 1Gigabit speeds if you connect the dongle to the LG 5k USB-C ports on the back?

Prefer to connect the dongle on the back of the monitor then let it hang by the laptop...so you can avoid unplugging it when you move the laptop =)
 
I suspect that your ethernet dongle is connecting at USB 2.0 speeds when plugged in to the display USB port.
That would explain the numbers that you actually get while plugged in to the display.
Some dongles just won't connect at advertised speed through an external hub --- which is essentially what you have on that display.

You could try a different brand USB to ethernet adapter, but hard to predict if the display will work at full speed with ANY USB to Ethernet dongle.
This one looks pretty good to me.
Maybe you will get lucky with the next dongle that you try.
Or, ignore the USB port on the display, and use what works for you now --- the built-in USB-C port on your MBPro.
You likely use Wifi when you take your laptop with you, right? So, no need to leave the dongle hanging out when you go mobile.
