Recently I've noticed that my computer's storage gets used up very quickly and I've just discovered that my shared folder is using over 250GB of storage. When I've gone into the shared folder lightroom is duplicating all of my catalogues and even duplicating raw files so they're in my user account (where I put them) and they're also going in the shared folder.

Does anyone know why this is happening and how to prevent it in the future please?

When you say shared folder do you mean shared with another user on your machine? If so just exclude this from the shared folder

No, there's no other user accounts on my computer, they were just going into the shared folder. However, I've just updated to Tahoe and it seems to be working OK now.

I think the OP means the standard folder named 'Shared' in /Users/ that is created by macOS by default. It's meant for sharing files between users on the same machine. It's always there. Doesn't matter if there are more than one user or not.

I've been using LR for ~20 years, and I've never seen this. My first guess would be some LR setting causing this.
