Do people use the Apple Time Capsule as an external hard drive to hold all of their media and then access it wirelessly? That has seemed to be the best option I have been able to find. Does anyone have any experience with this? Or thoughts?

It will work but a better option is a NAS that has some sort of redundancy to protect your data when a drive fails.

That will work fine. The issue is your data won't be backed up anywhere if it is on the TC disk, so just make sure you have a second copy somewhere other than the TC.
