I just purchased a iPod touch and when the device boots the apple icon that is displayed while loading iOS software has a curved line running through it. I tried to photograph it, but it doesn't show up in the photo. Is this normal or is my iPod's screen defective?

Completely normal.
 
On your Mac, click on the Apple in the corner, select 'About This Mac', and you will see that exact same logo with the line through it. It's just an odd choice on Apple's part to use different boot icons between iOS and OS X (actually, I think all iPods use the same icon as iOS devices).
