Dont currently have an ATV and considering the 3 just for airplay, I just dont see what there is to get excited about on the new one (I currently have FTV stick, chromecast, & raspberry pi2 as media center)

I don't think so, because of compression. Most 4K tvs are abysmal in quality and can't even stream netflix 4K, not too mention the issue of data caps, latency, etc.

Not sure what you've seen but current and last year's generation 4K TVs are superb in picture quality. Netflix and Amazon both have apps for 4K TVs on most branded TVs and the quality is excellent.
