I have a Google Apps account and under My Products I have Talk listed (there is no settings or account link next to it like the other products). I do not have a Gmail account. When I log in using iChat I have my non-Google email in the username field and location set as iChat. But I immediately get the message below. Ideas? I would like to not sign up for a Gmail account just to get access to GTalk.

I think you must have gmail in order to use Talk.

Did you follow all of the instructions here?

Absolutely, and it explicitly states (emphasis mine)

If you're signing in with a Gmail or Google Mail username, enter your full email address.
If your Google Talk username isn't associated with any Google email product, add @gmail.com to the end of your username. For example, iloveyoko will become iloveyoko@gmail.com.
If you're a Google Apps user, enter your full email address (gordon@example.com).
 
You wont need to forward port 5223 on your router to your computer since you're not running an XMPP server on your computer, merely a client.

I use Google Apps for my backup domain and Gtalk works fine for it.

My settings:

Jabber ID: user@example.org

This is an actual user account you've created in Google Apps.

Server: talk.google.com
Port: 5223
Use SSL: Checked
Automatically discover server & port: Unchecked (unless you've set up the correct SRV records on your domain's DNS)
Warn before password is sent insecurely: Checked
Use Kerberos v5 for authentication: Unchecked
Location: Whatever you want
Use my machine name: Doesn't matter.

So long as the user exists in Google Apps and you have enabled the Chat service it should work fine.
