I'm hopping to record multiple live instruments on separate tracks using Logic and a MOTU 828x interface.

Is it possible with this combination?
 
Yes.

If you are planning to use microphones to record them keep in mind that the Motu only has 2 microphone preamps but a lot of line level inputs.

If those live instruments need all their own microphone you need either a Interface with more mic preamps or external mic preamps.

For example for live drums you need, lets say at least 3 microphones (there are many techniques I wont argue that) better something like 8, and 8 microphone preamps (in the interface itself or external ones) to record to all seperate tracks.
 
I'm asking because MOTU's customer service isn't what it used to be.

I dont know the costumer support I dont own a MOTU product. I currently use a Focusrite 18i20

For what are looking for tutorials? There are tons over at youtube for recording multichannel audio, maybe you can tell what instruments you want to record. All at the same time I guess?

One mic for vocal, guitar (out of direct box) and synth.
