That's a toug question since there are a TON of recorder apps ... here is a search at App Shopper for recorder >> http://www.appshopper.com/search/?search=recorder >> 98 results ... maybe check a few out and see which one meets your criteria ... however SpeakEasy does start recording when you touch the mic and it does get very positive reviews.
