Matt: Film is a good learning media because you can't make all the changes on the fly that digital allows. This demands that you pay more attention to the initial framing and exposure of the photo. Even photographers who are naturals benefit from the attention to details that film requires.

Film forces you to THINK the shot through.
There is no chimping, no quickie do overs.
You build a confidence in your gear to know that you have it right.

I am a huge fan of getting useable images SOOC.

One of the local instructors is a friend of mine, and I have audited his classes. Some of his assignments are tough, and some fun. But all students who stick with the course come out better for the experience even if they have absolutely no plans to shoot film. In order to take Photography 102, you must complete Photography 101 with a manual camera, no Auto Focus allowed. In Photography 102 you can cheat and use a DSLR with AF.

I still take my Canon F1n out for a day in the woods. Nothing like shooting a 36 exposure roll of film knowing you have 36 keepers when you come back.

You don't HAVE to learn with film.
you can learn the exact same principles of film by doing the following.

1) buy a t2i
2) get a kodachrome picture style
3) smash the lcd
4) choose one iso
5) use a 128mb sd card
6) dip your hands in chemicals for an hour in a dark closet
