This isn't going to be some kind of video editing rig. Sure, maybe the occasional 5-min clip with a few effects, but I'm mainly wanting to grab an Air for Capture One and using an external monitor. I can find some pretty great deals on Airs with 8GB of RAM, but I'm wondering if that's enough. I haven't bought a system with 8GB of RAM in quite awhile. I don't know enough about the M1. Any experiences with this? Thank you!

You'll be fine with 8 gigs of RAM, but for longevity(5+ years) the 16 gig model will be a better choice. But, performance wise, the 8 gig will be perfect.

8 should be good. As you stated, the base model is sometimes significantly cheaper than an upgraded 16gb model. At that point, you aren't just paying the difference in ram upgrade.
