I'm mainly a PC user but have an M1 Macbook Max on order and want to plug it into my ultrawide PC monitor.
The monitor is an 49" ultrawide Samsung Odyssey G9 running at 5120 x 1440 @ 240Hz - will the Macbook support these settings (even if only at 120Hz) and if so, what type of cable would I need? It would be Display Port to the monitor as there is no Thunderbolt connector.

Yes, TB3 / DP from a dock.

My EX3501R has USB-C built-in working fine 3440x1440 @ 100hz.

I have a 'CalDigit TS3 Plus Thunderbolt 3 Dock' that I use on my existing M1 macbook now, will that still be ok on the new M1 Macbooks?

I have the same monitor and it works perfectly fine over TB to DP 1.4 cable @ 120 hz. My only issues was a little flicker when waking. Set the the frequency again it goes away.

I am using a very old Caldigit TS3 Lite and it works fine . I have a 32" 4K display off of it's display port, about 10 USB 3 devices off of a hub, and USB3.2 and thunderbolt devices. It even trickle charges about 15w which is enough for light work (I plug in MagSafe power). Now and then the dock needs to be rebooted because the Mac won't always wake it up after sleep but in normal use no issues.
