M2 MBA, 8GB & 256GB for $1199
M2 MBP, 16GB & 512GB for $1749

I only need the laptop for watching YouTube, web, browsing, emails, possibly a RHEL VM for troubleshooting work issues and syncing repos from Red Hat. I don't do video editing, photography, or anything that requires the performance of the Pro. I do appreciate the 120Hz, better speakers, and additional memory and storage, but is that worth $550?

Search MacRumors on this! There have been many threads devoted to that very comparison.

Also, just to complicate your decision-making, you should compare the 15” MBA to an Apple refurbished MBP or third party (Costco, Best Buy) deals. Prices can become comparable if you're adding lots of upgrades to the 15” — more RAM, larger SSD.

Yet, given how limited your needs or uses are, even an inexpensive M-series 13” laptop should work!

If you are not sure that you need a pro, then probably you don't need it. But I would spec the MBA with 16/512GB - if you think about running a VM, you'll need 16GB, and the SSD performance difference between 256 and 512 is significant.
