So I already have a single user .mac account. I would like to add 1 account for my fiance to have an e-mail and access to using the webspace for iphoto, etc on her mac. Can I add just 1 e-mail and gain access to this or do I have to pay for the familiy package? I really don't need the family package so I was just curious. thanks.

You would need the family pack. With the single user pack all you can do is add an email alias; which will still go into the one inbox.
 
As of now, the "e-mail only" account (NOT an alias, separate address and controlled by the mac member, but doesn't go to same inbox -- for $9.99/year) is just that -- e-mail only.

From the mac.com help:

You can also purchase up to 10 additional email accounts. (Email-only accounts get 512 megabytes (MB) of storage space but no additional .Mac services.)

But we don't know if that will change with MobileMe
