If I happen to have a rMBP which OD'ed on caffeine and no longer works. Do you think I can extract the 500GB mSATA SSD and put it into an Intel NUC as a hard disk? Thinking of making a ESXi mini server, putting 16GB ram and Xeon processor.

No, the retina MBPs use a proprietary SSD, that is incompatible to all other computers.
