I have a Mac Mini with a 1.8 Ghz Intel processor. I also have a USB based capture card device that was designed for pulling video off older cameras and capturing game footage from consoles. The capture card was a Windows only application (it did not work anyways with windows xp SP2), but I got it to run under Linux using TvTime. Is there a similar capture card viewing application for mac.

Have you just tried plugging it in? Maybe OS X would recognize it as a USB video camera or something. If tvtime is open source, maybe someone would be kind enough to help you build it in OS X. Or, you could install Linux in an emulator (Q) and read it like that. I don't know about any such app.
