Upgrade to Ventura screwed up mac mail 16.0. 'On My Mac' showing multiple trash, draft, spam, sent folders. Favorites ' all inboxes ' is good, no option for 'all drafts' nor 'all junk' and 'all sent' and 'all trash' missing some accounts/not showing, even tho options set in account settings for each email account.. ??? See screenshots. I basically want to work out of 'favorites' folders- which will have 'alls' for each account.

The different accounts only seem to show up under the 'All [...]' smart folders once they have actually been used for that category.

So, for example, to show up all the accounts under 'All Drafts', you have to create at least one draft in each of the accounts so that the corresponding folders are created on your Mac. When you have done it once, they should remain there.
 
That looks normal for a machine with multiple email accounts. You can close up the lists by clicking the disclosure triangles labelled "1". And click the plus icon at "2" to add 'all drafts'. Play around with these controls for individual accounts to to turn on the junk, sent, and trash folder.

Thanks Guys. So I see when I created a draft for a certain account, that 'drafts' folder was created under 'On My Mac'.
I'm guessing the same happens with corresponding actions for 'sent', 'trash' and 'junk' for each account.
What is throwing me, is each of those accounts folders are listed under 'On My Mac'. I upgraded from 10.14 Mojave to Ventura 13.1- In Mac Mail on Mojave, those multiple folders were never seen under 'on my mac'.

Any way to hide just them? I dont want to hide the whole list.

Not as such. You have to add the folders that you want to always be visible to the 'Favourites' section (under All Inboxes, All drafts etc), and then collapse the 'On My Mac' section hiding everything else, as chabig described earlier.

I think this change in behaviour first came about with macOs Monterey.
