When I print anything out of Mac Mail the default scale is always 150%. I change it to 100%, print something and the next time I print it's back to 150%. There is nothing in print preferences under system preferences where I can set the default scale.

When I print from Word or Preview, for example, the scale is 100% so I don't have a problem with those apps.

Three steps:
  1. Select the File/Page Setup... menu item.
  2. Under the Page Attributes popup menu, select Save As Default.
  3. There is no Step 3.

Hi MisterMe - I don't have a file/page setup in my version of Mac Mail (v4.3)

Mail 4.4 has the scale in the File/Print dialog box. Mine defaults to 100%. Make sure that you expand the dialog box to full size so that you see all available options.

UPDATE: Solution

No matter what I tried whenever I changed the scale back 100% (it defaulted at 150%) it never stuck. I then deleted the com.apple.print.PrintingPrefs.plist file located in the Library folder, retarted my Mac and it's back to 100% as the default.
