I'm thinking of replacing my mini 2012 with a mini 2018 and an LG UltraFine 5K. I would like to keep my mini 2012 chugging along as a headless unit and connect to it remotely via Screen Sharing from my new mini. I know that the 2012 mini can't drive a 4K or 5K monitor, but would I be able to connect remotely to it through Screen Sharing and if so, what would be the resolution?

The display on your 2018 Mini has no relationship to screen sharing from the 2012 at all. The remote computer cannot see what display is on your 2018.
Due to some quirk in the hardware on the 2012, graphics performance is poor when there’s no display connected.
