Having wifi disconnected, USB peripherals disconnected, BT didn't improve. Of course, it's usable, but the performance is not as great as the USB receiver. And to be clear, this MX Anywhere 2S works fine on my PC using BT connection.

I have my Mini on my desktop 12-18" from my Magic Trackpad and BT gets very laggy intermittently. The Mini is connected via Ethernet, so no WiFi and I have a wired mouse that works 100% when the Trackpad is lagging, so it's not a UI or system performance issue. I also have a Magic Trackpad 2, but it is virtually unusable with the Mini (both trackpads are 100% w/ a 2019 13" Macbook Pro and 2017 13" Macbook Air).
The issue ~seems to be device specific since the BT connection to my HHKB Hybrid Type-S is solid, but a keyboard is very different than a trackpad or mouse. I also have a Logitech MX Anywhere 2S BT mouse and it seems fine (even when the trackpad is lagging), but I don't use it enough to know whether it is 100% all the time. I also recently had the logic board in the Mini replaced (twice, since they ordered the wrong logic board the first time) at an Apple Store for an unrelated issue, but the BT issue has remained consistent across all three logic boards.
I've resorted to buying a third-party BT dongle from Hideez and will see if the BT issue once and for all.
Your post describes the issues I'm having with my Mini exactly. Did you have any success with a BT dongle? I upgraded to Big Sur last week and my Mini's BT failed completely, forcing me to revert to Catalina again. I'll take intermittent issues over total failure any day of the week.
