I am considering purchasing a Mac mini 2020 with i7, 1TBSSD, and 8 GB ram. I will upgrade the ram to 32 GB myself. What would be the best way to hook up two Dell P2715Q monitors? The two monitors are 27" and 4K. The monitors do not have Thunderbolt 3 (USB-C).

I'm using two P2415Q's (the 24" version of that same display, also 4K) with a Mac mini. You can just get two USB-C to DisplayPort (or MiniDisplayPort) cables, but if you'd like to "save" one port on the mini, OWC/Akitio/Sonnet/StarTech/etc all have their own version of essentially the same TB3 to Dual DP adapter. I got the OWC one (https://eshop.macsales.com/item/OWC/TB3ADP2DP/) because I found it first through a distributor here, but any of them should work fine.
