Great find! Where did you find that deal? The lowest i've seen the 2018 Mini's have been $699 on Amazon for the i3 and $899 for the i5 Mini on B&H Photo.
Congrats on the deal. I never heard of that website until now. I noticed they have to identical specc'd units for sale. One is for $799 and the other is $599.
I would have scooped up on the $599 deal if I didn't buy my i5 base model when it went on sale on Amazon for $949 in September.

From my research on the company, they used to trade as PC Connection as well as Mac Connection in the 90's. I vaguely remember hearing of them way back and probably even ordered from them.
But this deal I just saw randomly in one of those hot deal emails that you don't really know how you started getting, can't get to stop but sometimes can be gems.
What has to be acknowledged is this is nothing more than deliberate manipulation to encourage an i5 purchase.
Personally, for nothing more than some surfing and loading photos, I feel the i3 is capable. Keep in mind that ALL 2018 Mac Minis will be declared obsolete the same day regardless of processor/SDD/RAM.
I WANT the i5 for no other reason than it is supposed to be More Better but for basic use...?

I don't like the 128GB internal storage. This basically condemns your Mini to live with external drives. Even 256GB seems pretty small for these days. My next project is putting a couple of Samsung EVOs on my 2012 Mini in RAID-0 to reach nearly 1000MB/s speeds. But from a 2011 Mini, since (if I'm not wrong) it has a SATA-III plus a SATA-II port, a 2018 i3 seems a nice upgrade, although I'd miss the line in port.
If one is going to use external drives, then a stationary desktop machine is certainly the appropriate place to do it. What I don't understand is people choosing to have drives hanging off their laptop. I don't want to have to go through an eject & unplug checklist every time I pick my laptop off the table!!

It depends what it is. Important data should be backed up so having only minimal data stored in your Mini is advantageous in cases of recovery. Get a NAS if you have data to protect.
