After I installed Vista and tried to go on OS X i get a grey screen of death saying restart
 
That, ladies and gentlemen, is a kernel panic. It's usually due to software that your computer doesn't feel like being buds with. As for panics caused by Vista, I'm not sure of any solution in which you'll be able to keep Vista on your computer. Probably wiping your hard drive is the only option. Boot from your OS X disc, run Disc Utility and check your discs and then see if you can delete your Windows partition. Deleting that partition has usually proved to be difficult though. Hold off on installing Vista until you have the final version of Boot Camp in Leopard.
