Hi all. Is there a list or guideline of internal SSD drives that work as boot drives in these old Mac Pros? I have had issues with newer Samsung drives not rebooting in the past. I also have all my PCIe slots full of Pro Tools HD cards, so an NVME drive in a PCIe slot isnt an option. Any help or guidance here would be appreciated.

Yes, it's a SATA III SSD. It was in bay #1 but I moved it to a PCIE slot to get a bit more speed and use the standard bay for a larger standard drive. Keep in mind the regular bays are limited to SATA II.
I could have went NVME but I already had the old "Blue' drive from another project.

I have used several WD or Crucial SSDs, I just check if they are approved for Mac OS.

However, I installed Opencorelegacy patcher, onto my 5,1 twin CPU MacPro, using Monteray. And after a few boots, Opencore did not boot. I then used Mac O S Mojave's disk utility running from Mojave OS, and repaired the disk. Opencore then worked.

But a week or so later, it failed again, and would not boot, even after repaired the drive.

The disk is a new Crucial MX 500 1 TB, and I have used the same drives before (2TB versions).

I am not sure whether its a bad drive, not compatible, or Opencore related.
